TASTE IDENTITY 2013 BY PAOLO MARCHI: THE BEST MALE / FEMALE CHEF (ANTONINO CANNAVACCIUOLO, ANTONIA KLUGMANN) THE BEST FOREIGN CHEF (DANIEL HUMM), TOP SOMMELIER (MAURO MATTEI), THE SURPRISE OF THE YEAR (SILVIO SALMOIRAGHI). THESE ARE THE YOUNG STARS

Antonino Cannavacciuolo of the restaurant villa Crespi in Orta San Giulio (Novara) is the best chef and Antonia de Klugmann of L’Argine del Dolegna del Collio (Gorizia) is the best female chef. The best foreign chef is Daniel Humm of Eleven Madison Park in New York, while Salvatore La Ragione of the restaurant Torre del Saracino in Vico Equense (Naples) is the best sous chef.
The best pastry chef is Mario Peqini of Aimo and Nadia’s Il Luogo in Milan; the best maître is Alessandro Pipero of Pipero at the Rex in Rome, and the best sommelier is Mauro Mattei of the restaurant Piazza Duomo in Alba (Cuneo). The surprise of the year is Silvio Salmoiraghi of L’Acquerello in Fagnano Olona (Varese).

These are the "Young Stars 2013" of “Taste Identity - Guide to Signature Restaurants of Italy, Europe and the World”, edited by the journalist Paolo Marchi.
