These are the special awards of "Top Italian Restaurants" (www.gamberorosso.it/restaurants), Gambero Rosso’s new guide that judges the best restaurants and places dedicated to Italian food in the world. It is an on-line tool designed for those who are “hunting for restaurants around the world that truly enhance authentic Italianness at table”.
At the moment, “there are 300 restaurants included in the list”, said Paolo Cuccia, president of Gambero Rosso, “but the app is constantly being updated to monitor the reality of Italian catering on the five continents, which changes at an incredible speed. That's why it's in digital format. The goal is to review a thousand top fine dining restaurants, wine tasting and pizzerias, within two years time”. 19 Italian restaurants around the world were awarded the "Three Forks", 10 the best wine tables and wine bars and 12 best pizzerias, in a panorama where there is a young generation of chefs and food entrepreneurs taking the authentic Made in Italy products around the world.
“Our magazine”, said the curator, Lorenzo Ruggeri, “brings to light the "young generation chef". All recipients of the awards are under 35, and do not want to cook "the usual", but rather want to express freshness and creativity in dishes, not forgetting, of course, their deep roots”.
“According to a team of gourmet critics, today it is easier to eat good Italian food in Tokyo and Copenhagen rather than in neighboring Germany and Switzerland, where they often re-invent chefs and Italian sounding products. One of the most popular Italian products is the ‘nduja salami from Calabria for spiciness and then the specialty cheese from Apulia, burrata, which has been overused.
“We created "Top Italian Restaurants", concluded Cuccia, because there was a need to reward the Made in Italy spokesmen in the world and help internationalize the country-system. Furthermore, the intelligent use of our database, with over 50.000 entries, marks a new page for Gambero Rosso that would like to do even distance training digitally”.
