“PROMOTING SAFETY AT MEALTIME STARTING WITH PRESCHOOLS”: THE PROPOSAL MADE BY EMANUELE SCARELLO OF THE ASSOCIATION JEUNES RESTAURATEURS D’EUROPE ITALIA

The president of the Italian chapter of the association Jeunes Restaurateurs d’Europe Italia, Emanuele Scarello, recently made a request to the Italian Health Ministry to start a series of encounters in preschools to communicate the need for healthy and correct food habits. This was one of the results of the round table discussion, “Healthy food and quality cooking: the new frontier for the restaurant sector”, held recently in Florence and promoted by 340 chefs from the countries of Austria, Belgium, France, Germany, Luxembourg, Holland, Spain, Slovenia, Switzerland, and Italy that belong to the association Jeunes Restaurateurs d’Europe (JRE).
The director of Food Safety and Nutrition for the Italian Health Ministry, Silvio Borrello, also participated and noted that over the past year 1,300,000 controls on food production plants had been made, a testimony to the “great work that is taking place for prevention and for respect of the rules that are the foundation of healthy nutrition”.

According to the European president of JRE, Erwin Rozendal, “throughout Europe food safety is a necessity, inside and outside of the home”. Being a chef, according to Scarello, “does not mean being a nutritionist, but rather being moved by food and stimulating the culture of more interesting products. Still, taste, culture, and health are the parameters to be followed in order to have quality nutrition both at the restaurant and at home”.
