The best foreign chef is Daniel Humm of Eleven Madison Park in New York, while Salvatore La Ragione of the restaurant Torre del Saracino in Vico Equense (Naples) is the best sous chef.
The best pastry chef is Mario Peqini of Aimo and Nadia’s Il Luogo in Milan; the best maître is Alessandro Pipero of Pipero at the Rex in Rome, and the best sommelier is Mauro Mattei of the restaurant Piazza Duomo in Alba (Cuneo). The surprise of the year is Silvio Salmoiraghi of L’Acquerello in Fagnano Olona (Varese).
